Super Smoothie

I am a SHAKE girl. I love spinach and I love this shake, I swear it has healing properties. I have one EVERY day, it makes me feel ohhh so good! NOTE: a "GREAT" blender is very helpful to make smooth hence the word SMOOTHIE! Standard blenders will work but you will see green fleck from the spinach.

This is my SUPER Smoothie recipe - NOTE: these measurements are approximates

1 or 2 BIG handfuls of Spinach or Kale
1 Yogurt
1 Cup Blueberries/Berry Blend (frozen)
1/2 Can Pineapple 15oz (fresh when available)
1 Banana
1 handful Ice (to make cold)
1 heaping Scoop Vanilla Protein Powder
1 or 2 TBL flax seed powder or oil
1 TBL Ground Flax Seed or Psylium Husk Powder fiber (Optional)
OJ or juice of choice to desired consistency



Serves approximately 2 full tall glasses. Adjust quantities above to appropriate servings.

TRUST me.... the spinach is 100% UNDETECTABLE to taste or sight! Kale you can taste but is amazing for you. Switching things up by adding or replacing the fruit with other things like peaches or strawberries gives variety but ALWAYS do the GREEN STUFF!

Where can I find Kale? I remember you told me once but my brain is a bit forgetful! I'm for sure going to try this one!

Jen, have you perused Jessica Seinfeld's cookbook of veggie & fruit purees that you can slip into cookies, cakes, muffins, turkey burgers, pasta, etc. etc.? It's fantastic! We have creamed spinach in many things; I love to see another flax-seed-whole-foods-fruit smoothie fan! We make them often; but now I'll add spinach and kale. I drink my own 'green drink' with those 2 plus cucumbers, celery, apple and lemon. It's tastes like a GARDEN! Hope to get together when you get settled in Austin!
